Fall is almost here and that means cooler weather and the start of school. Enjoy this slow cooker chicken recipe that makes 6 to 8 servings for a delicious dinner that takes little preparation.
Ingredients:
-2 pounds ground chicken
-1 can kidney beans, drained and rinsed
-1 can white beans, drained and rinsed
-2 cans diced fire roasted tomatoes
-3 tablespoons chili powder, plus 2 teaspoons
-1 sweet potato, peeled and shredded
-1 can low-sodium chicken broth
-1/4 cup instant tapioca
-2 tablespoons soy sauce
-1 tablespoon kosher salt
-1 tablespoon onion powder
-2 teaspoons granulated garlic
-1 teaspoon dried oregano
-1 teaspoon ground cumin
-Pinch ground cloves
-1/4 tablespoon ground cinnamon
-Optional toppings:
-Sour cream
-shredded cheddar cheese
-chopped jalapeños
Directions:
Put the ground chicken in your slow cooker. Then add 3 tablespoons of chili powder and all the rest of the necessary ingredients. Stir all ingredients together in the slow cooker, cover and cook on low for 6 to 8 hours.
Before serving, add the remaining 2 teaspoons of chili powder as well as salt and pepper to taste. Divide the chili into bowls, add optional toppings and enjoy.
